An easy Rocky Road Recipe (featuring Snickers bars - yum!)

Each Christmas I love to give my family a homemade gift. Last year I made jam drops, from my Nanny's treasured recipe which you can see the recipe for here. This year I wanted something easy and a little naughty that everyone would love and it wouldn't take me hours to make. I settled on Rocky road - who doesn't love Rocky Road?! Here is the recipe I came across, courtesy of Not Quite Nigella.




Snickers Rocky Road

An Original Recipe by Not Quite Nigella
Preparation time: 5-10 minutes
  • 375g milk chocolate
  • 200g roasted unsalted peanuts
  • 6 full sized Snickers bars
  • 225g bag of marshmallows
1. Line a 20x20 cms (8x8 inch) square tin with foil. 
2. Chop up two of the Snickers bars and set aside and then chop the rest of the bars. 
3. Over a double boiler (a heatproof bowl placed over a saucepan of simmering water) place the chocolate and the pieces from the two Snickers bars and melt this (it won't fully melt but it will partially melt). Ensure that the base of the bowl doesn't touch the simmering water.
4. While this is melting, cut the marshmallows in half roughly and place in a bowl along with the roasted unsalted peanuts and pieces of the remaining four Snickers bars.
5. Stir so that the rubble of the peanuts and marshmallows are coated in chocolate and then spoon into the lined tray.
6. Refrigerate or cool on a benchtop until set and then cut into pieces.

The only trouble with making this one, is that its hard to not eat all of the ingredients before it sets. I must admit there were a few marshmallows missing from this recipe!!
