Summer Picnics (+ a giveaway!)

I love summer and in particular eating outside for dinner.
We try to eat outside most evenings, to enjoy the cool summer breeze and fresh air. On Valentine's Day I wanted to cook a special dinner and dine outdoors with a difference. Instead of sitting at our outdoor table setting I thought we would have a picnic in the backyard.

A picnic blanket, delicious food, chillout music playing in the background and of course a very hunky Hubby to share the evening with. How lucky am I?!
Mr Coopar also gatecrashed and continued to photobomb us, I think the delicious Mexican just smelt too good that we were devouring!
Hubby's favourite food is Mexican, so I thought I would take the stress out of cooking and utilise the slow cooker to make dinner for us. I love pull apart Mexican inspired meats and have only just discovered just how easy it is to do it at home. 

The only thing about dining outside in the evening is the Mosquitoes - but lucky for us they stayed well clear thanks to Mortein's new automated plant based Naturgard control system, we were able to enjoy a beautiful relaxed evening on the lawn.

So I was going to share with you the recipe I used for my slow cooked pull apart beef. But the reality is I am not a Food Blogger, I followed someone else's recipe.
 It wasn't that flavoursome.
 It simply looked good on paper.
 So instead, I will share with you a different recipe I have used and 100% can recommend. It is Mexican shredded chicken, made using a homemade salsa.

Crushed linen and soft cushions are necessary. I think Hubby appreciated it though!






You will notice of the absence of tomato in this meal. Yes, they were forgotten in the grocery shop and I was not in any mood to zip back to the shops, I was too keen to get outdoors on this picnic rug and eat!



It was such a beautiful evening and I am going to make sure its a regular occurrence, eating out in the garden as much as I can before Autumn is upon us.

  1. I love summer barbecues the most, not least of all because hubby normally takes over the cooking of them and there is less than normal washing up for me to do afterwards (most things go straight in the dishwasher)! I especially love barbecued prawns.

  2. I'd like to say BBQ but that would mean I'd have to do some food prep. So my second fave is the good old fish and chips, unwrap the paper, lay it on the table and dig in!

  4. I love eating outside! We don't do it at home much because we don't really have the space for it, but I often sit outside in the afternoon with my cup of tea.

  5. My hubster does an awesome sizzling steak and stirfried vegies on the BBQ - it's his "party piece" and never fails to impress guests. Plus *I* don't have to cook! Your picnic looks very inviting, tomatoes or no tomatoes ;-)

  8. You can't beat a BBQ. Anything on the BBQ has me excited. I think mainly for the fact I hand the tongs over to my husband.

  9. We love eating outside too. It's a real novelty for the kids and lovely if you get a cool breeze and no mozzies! Our favourite is a salad, homemade chips and steak for my husband and the kids and a veggie pattie for me.
