I was looking for something simple and easy to make for a dessert, as my gorgeous Cousin and her Husband were coming to stay the night. I had planned to do a pizza dinner on the Webber BBQ, where everyone could add their own toppings of choice. The pizzas were delicious,until we ran out of gas on the BBQ (always the way isn't it!) and had to transfer the rest of the pizzas to cook in the oven. Not nearly as exciting!
These cookies were the perfect way to finish the night.
With only four ingredients and only 10 minutes in the oven they are pretty fool proof. Especially if you are wanting to impress guests!
I found the recipe on Wholefood Simply. It is my go to website if I am looking for a healthy sugar free treat or dessert. You might have seen me posting Bianca's Poppyseed cake or Top Deck Slice here before?
I thought you might like this recipe too. maybe you have guests to impress or just some hungry little ones who love the choc peanut combo?
- 12 medjool dates, seeds removed
- 6 tablespoons peanut butter
- 3 tablespoons cacao or cocoa
- 3 tablespoons crushed peanuts
- Preheat your oven to 175°C or 350°F. Line a tray with baking paper.
- Place the dates, peanut butter and cacao into your processor and blend until the mixture is well combined and resembling a thick cookie dough. Add the crushed peanuts and mix to combine. Roll the mixture into a ball and place it between two sheets of baking paper. Roll the cookies to your desired thickness, mine were between 5-8mm. Cut the cookies with a cookie cutter and place onto your prepared tray.
- Bake the cookies for 8 – 10 minutes. Remove from the oven and leave to cool for 5 minutes before gently transferring to a cooling rack to cool completely.
- Serve. Eat. Enjoy.
note – if using unsalted peanuts and unsalted peanut butter, add a pinch of salt to the mixture prior to baking.
I have been getting my bake on the last few days, as today we leave for a five day camping trip by the beach on the Clarence Coast. I love having some homemade treats to enjoy when in our home away from home. I also recently bought a thermocook, so it has been alot of fun trying thermomix recipes and getting used to that style of cooking. Hubby calls it the robot and laughs as it is continuously on when you walk into the kitchen, a slight whizzing sound in the background whipping up something yummy. I am obsessed! I hope the novelty doesn't wear off and it starts collecting dust!

ReplyDeleteOh they truly are delicious! I added a touch of salt as I used unsalted peanuts and the combo of cacao and salt was so good :P I haven't yet had a chance to really get into the thermie recipes and community, but I cannot wait. I am off to stalk your recipes now!! xx A

DeleteThey look super healthy and super yum! I love my Thermomix as much as when it first "came home" in 2012 only every day I love it a bit more! We use it multiple times a day for everything from juicing to chopping, cake mixing to steaming. You're in for a treat!
