Recipe: Delicious & Healthy Banana, Coconut + Goji Berry Bread


I am a morning person, I love getting up and seeing the sun rise, hear the birds singing and be the first one up in my house. It's refreshing to wake early and feel like you are not missing any part of the day! 

As much as I am a morning person though, I cannot stand breakfast. I have a real love hate relationship with it. Although I am hungry (I wake starving, I have a super fast metabolism!) I dislike breakfast foods. The only thing that I haven't yet tired of it a crunchy granola or museli, with yoghurt and fruit. This is my staple breakfast meal, although I do need a bit of spontaneity and am always looking for breakfast inspiration. I came across a recipe here for a healthy banana bread - one free from gluten, dairy and refined sugars which I love. 

It's perfect fresh or slightly toasted with butter and today on this gloriously lazy Sunday morning, this is what I will be indulging in....


If you feel like getting busy in the kitchen, here is the recipe (trust me it wont last long!)

Ingredients:

1/3 cup rolled oats
1/3 cup coconut flour
1/3 cup almond meal

1/3 cup solidified coconut oil

1 table spoon flaxseeds
1 teaspoon cinammon
2 table spoons coconut sugar
2 tablespoons goji berries
2 teaspoons baking powder

3 ripe bananas mashed
4 eggs


Method:
  • Preheat the oven to 180°C/160°C fan forced. Grease and line the base and 
sides of a 7 x 22cm (base measurement) 
loaf pan, allowing the edges to overhang.
  • Combine 3 tsp of the oats, 2 tsp of the flaxseed and 1 tsp of the coconut sugar in 
a small bowl. Set aside. Use electric 
beaters to beat the coconut oil and remaining sugar in a bowl until pale and creamy. Beat in 1 egg and 1 tbs of the coconut flour. Repeat with the remaining eggs and coconut flour until combined.
  • Add the almond meal, goji berries, 
baking powder, cinnamon, banana and remaining oats and flaxseed to the egg mixture and stir to combine. Spoon into prepared pan. Smooth the surface, then sprinkle with the reserved oat mixture.
  • Bake for 1 hour or until firm and a skewer inserted into the centre comes out clean. Cool in pan for 15 minutes. Transfer to a wire rack to cool. Serve warm or at room temperature.

You won’t believe how delicious and yet still so healthy it is - the almond meal gives it such a great nutty flavour combined with the coconut and mashed banana. Much more wholesome and filling than any store bought ones!
