Breakfast Inspiration: Crunchy Granola


I am always on the hunt for easy, yummy and nutritious breakfast inspiration. 
A little while ago I shared this Banana, Coconut & Goji Berry bread which was a winner and this Banana and Cinnamon Mousse with Walnut Crumble. I love to spice things up otherwise I get bored of the same breakfast each day. What about you - do you like breakfast or are you always looking for some new inspiration like me?
Today I thought I would share my staple breakfast. Its the breakfast that I always have in the cupboard ready to go for the mornings I am in a rush or cannot be fussed to make anything fancy. 
It is simple crunchy granola.

It may seem like alot of work, but truly it isn't! You just raid your cupboard, mix all the items together and bake until brown and crunchy. You then store it in a pretty jar and each morning there it is waiting for you to crunch into! Easy!
It is packed with goodness and is delicious. I tend to not stick to an exact recipe though, I encourage you to do the same. Adapt what I have listed below to suit you -maybe you want to add some dried fruit or different nuts? Go for it, truly there is no right or wrong with granola, its all about mixing together your favourite nuts and adding the oats! You will see that I use oats as the base and then word the rest as 'a handful', well thats what I want you to do, if you like it add more, if you don't leave it out and add more of something you love!
I used what I had available in my cupboard - oats, almonds, walnuts, shredded coconut, chia seeds, sunflower seeds.
Use this as a guide:
  • 3 cups rolled oats
  • 2 cups crushed nuts (pecan, almonds, walnuts, brazil nuts etc)
  • A handful (approx 1/2-1 cup) of mixed seeds (sunflower, pumpkin, sesame etc). 
  • 1/4 cup chia seeds 
  • 1 cup shredded coconut
  • 1/2 tsp ground cinnamon
  • Sprinkle of sea salt
  • Tablespoon of coconut oil
  • Two tablespoons of honey, agave, maple syrup or a liquid sweetener of your choice
Then...
  1. Preheat oven to 170C
  2. Line a big baking tray with paper.
  3. Mix all dry ingredients together in a nice big bowl until everything is well coated. Then stir through the coconut oil and sweetener, ensuring the mixture is well covered.
  4. Spread the granola mix across the trays and place in the oven for 10 minutes - toss everything about a bit then return to the oven and repeat  until your granola is brown and crunchy (about 30 minutes in total).
  5. I then store mine in a glass jar in the pantry and serve it with either almond milk, or yoghurt and fresh fruit. Whichever you fancy!
