Date, Coconut + Caramel Energy Balls


I have never been a caramel kinda girl. But when the caramel gooeyness is made from Medjool dates and lots of other healthy ingredients then I am in!

These Date, Coconut + Caramel Energy Balls are delicious. They didn't last long in my house! You can add extra protein with a tablespoon of natural powder, I used raw organic Mesquite powder. It has a wild nutty, caramel flavour, is full of calcium and potassium. Either way, these balls are seriously delicious.  The nuts make these packed with vitamins, minerals and fiber. 




Here is the simple recipe
  • 1/2 cup cashews
  • 1/2 cup almonds
  • 1 cup medjool dates
  • 1/2 cup desiccated coconut
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • pinch sea salt
  • extra desiccated coconut, to roll
  1. Place the cashews and almonds in a food processor and pulse until very finely chopped. Add in the dates and process until the mixture is well blended and starting to clump together.
  2. Add the 1/2 cup of coconut, vanilla, cinnamon, and salt, and process to combine. 
  3. Pour about a 1/4 cup of extra desiccated coconut into a bowl. Roll the mixture into about 20 small balls, then coat each one in coconut. 
  4. Enjoy! They wont last long.
